Remarkable Restaurant On the strength of his successes and his position in the Toulouse landscape, Pierre Lambinon can savor the moment. The "small" Projection menu is not very attractive at €158, but the "large" one is much more attractive at €188. So don't hesitate, if you've managed to find a seat in this pretty, intimate vaulted room, to enjoy some of the delights of the moment: Pyrenean trout with salsify sauce, roast monkfish with shellfish marinière, line hake with asparagus, before the Manex pig and the "Grand dessert" (in the light version at €30 less, it's called the "Petit dessert"). Each plate shows a calm spirit, full of finesse and precision, an attention to detail that makes this one of the city's finest restaurants. Wine cellar of a great house, beautiful flamboyant labels, references from all regions.
