The Grand Hôtel’s restaurant, with its opulent Napoleon III-style décor featuring beautiful wood paneling, velvet, gilding, and upholstered armchairs, remains true to its legacy. Chef Thierry Longo is a highly commendable professional who keeps the pace and strengthens his culinary reputation alongside his executive chef, Patrice Paya: foie gras with apricot and black tea; thin-sliced sole with mussel cannelloni, confit fennel, and bergamot beurre blanc; pigeon breast with Solliès figs and chanterelle mushrooms, elderflower panna cotta with blueberry gelée—all part of a splendid “Gourmand” menu priced at 75 €.
