Chef's Restaurant An astonishing Russian pavilion paying homage to current owner Claude Rémy's grandfather Pétrus, who gave the atypical architecture of the premises and the taste for wine to this house of no less than six hundred references. Presiding over this charming and luxurious experience are chefs Thierry Longo and Patrice Paya, offering pleasures from €69, leek bavarois, trout gravelax, pickles and leek foam, the angling of the moment in aïgo boulido, fennel confit and stuffed with sea urchin tongues, pigeon breast roasted on a chest, bao stuffed with thighs, Brussels sprouts, cherry juice and coffee, strawberry tartar and juice, almond shell, kalamansi savarin and coconut ganache. Two other menus at €75 and €109 for up to nine courses.
