We remain as impressed as ever by the skill of Matthieu Roche and Camille Fromont, whose impeccable reputation seems unshakable. The restaurant is as packed as ever, as lively as it was on day one, with a mix of regulars and new loyal patrons drawn in by the former. We keep coming back for this truly signature cuisine, which reinvents itself with every season and offers compositions that are as clever as ever, both in substance and presentation: a rosette-shaped carpaccio of young turnips, pomelo, and XO sauce with mushrooms, tempura shrimp—a journey of flavors and a model dish, with its textures, rich sauce, and light seasoning; a superb shoulder of lamb from La Roque-d’Anthéron, beets, and miso jus, cooked to perfection, with the miso flavor coming through beautifully and the beet featured in various forms, or a cannoli with ricotta, pistachios, and cocoa nibs. The wine list remains as delightful as ever, curated according to Camille Fromont’s preferences, and she always offers excellent advice.
