Remarkable Restaurant
Nestled on the heights of Le Broc, not far from Issoire and some thirty kilometers from Clermont-Ferrand, Adrien Descouls is developing a committed cuisine rooted in this very natural setting, offering a magnificent panoramic view of Auvergne's volcanic landscapes. This homage to the region is evident from the very first course: tomato and gentian root are given a gourmet treatment. It's as if you're a child, dipping your bread in the vinegared tomato water. We continue with a piece of pike-perch - cooked very short, with the bone - combined with celery and peach, giving the dish plenty of acidity. The lamb is a real pleasure, thanks to the frankly interesting kidney sausage and its deep juices. The strawberry with creamy arugula is as beautiful as it is delicious. As for the rhubarb, the association with the agastache leaf, all acid-bitter, is of a rare subtlety. A fine wine list, led by a passionate sommelier.
