Remarkable Restaurant Winner of last year's Gault&Millau award, and the city's new three-toque chef, Tomofumi Uchimura, while respecting and following regional codes, brings an open-minded approach to cuisine without blinkers or borders. This great restaurant, which was Thibert's forty years ago, then Derbord's twenty years ago, has plenty of continuity and ideas: And three solid "toques" with well-mastered plates: foie gras with asparagus and Morvan ham, like a salad starter, but with fine work on textures and flavors, granny cacao and gingerbread to condiment, Arctic char and green asparagus, rack of veal and sweetbreads with peas, carrots, wild garlic and mustard. Good four-course menu at €95, pleasant strawberry-rhubarb-white chocolate dessert, surprise lunch menu at €48 and a well-stocked cellar of prestige labels from all regions.
