Chef's Restaurant In a quiet street, between the gate and the castle, a prominent and fashionable restaurant, both discreet and elegant. Florencia and Lorenzo cultivate both the warmth and generosity of their Transalpine roots with a rigor and sobriety reminiscent of Japanese cuisine. A single menu, delivered sparingly five nights a week. In this obviously controlled model, the customer is a bit of a prisoner, but also knows how to recognize the quality of work made easier: chawanmushi miso broccoli seaweed emulsion, cannelloni with leeks pork jus hazelnut espuma, sea bass champagne cockles and tapioca emulsion, roast duck turnip boule d'or Rossini style, white chocolate tacos tahini salted caramel miso ice cream. A varied wine cellar, with formidable prices (€85 for the five-course menu).
