Chef's Restaurant Stéphane Cunin's fine technique is evident in every dish, adding a convincing touch of soul and intensity. His table on Place Gramont is often very lively, and rightly so, with a bistro spirit that's both vintage and lively, varnished wood, leather banquettes, a large counter, and plates that always work well, a chicken egg from Camymosa, ragoût et velouté de topinambours, kadaïf, poisson de la criée, poireaux aux algues nori, croustillant et pickles de pommes de terre, merlan de boeuf, pulpe de céleri boule, pleurotes et gras de canard en béarnaise, crèmeux bergamote et crumble amande. Well-constructed cellar, with a relevant selection from the region.
