Discreet but very much present in his tightly-packed alleyway in the heart of Vieux-Nice, Thomas Hubert continues his quest for gourmet simplicity, offering polished, no-nonsense plates at fair prices: fine pissaladière-style tart with black pudding, roasted scallops with pan-fried foie gras, squash risotto, roasted veal with sage, carrots with curry and grenailles, reduced veal jus... Delicious old-fashioned desserts, such as brioche perdu with pink praline caramel or minute madeleines, and attentive service.
