After completing his humanities in some of the world's top establishments, MOF chef Sébastien Chambru has found a haven of peace and serenity in the heart of the Pouilly-Fuissé vineyards: fine produce, a splendid region, a terroir conducive to the development of true cuisine, underlined by expert gestures: ravioles of scallops in a dashi and beet broth, steamed pike-perch with roasted grapefruit, veal breast confit with curried asparagus and braised carrot make up a lovely menu, served for lunch or dinner, for €72, ending with the creamy hazelnut quince and parsley morel cookie. A cosy, intimate atmosphere in this well-kept interior, with a well-stocked cellar featuring 700 references.
