Chef's Restaurant A modern, atypical dining experience in the former Labarde railway station, where Manon Garret and Thibault Guiet have taken the space and kitchen to a whole new level. You'll feel right at home here, in front of the open kitchen, enjoying the scallop carpaccio with passion butternut harissa, delicately and attractively dressed with trout roe and ribot milk emulsion, semi-cooked red tuna, blinis, beet jam, blackcurrant, hibiscus condiment and beet spiral, double cream with caviar, just as well proportioned, the sweet potato confit with spices, orange pepper cream, grilled onions with a very good reduced juice with ginger and lemongrass flavors, cannelé and Medoc hazelnut for a cook's dessert, regressive, assertive and well translated. The cellar is well-stocked and fair, with a single evening menu at €85.
