Housed in the Fairmont Hotel, in one of the pinnacles just below the casino gardens, a bright space overlooking the Mediterranean and dedicated to that famous Asian fusion popularized by Nobu at the turn of the century. Chef Olivier Rinaldi is invited to take on the task with an extensive menu featuring sushi, tacos, sashimi and nigiri, tempura and soups, in addition to the brand's classic black cod miso, "new style" sashimi, octopus tiradito, wasabi lobster and wagyu miso.
