Gourmet Restaurant From the terrace of the Citadelle's new brasserie, three centuries look down upon us. The walls of the fortress, with its majestic stonework and history, instantly immerse visitors in a condensed moment of Franche-Comté, and the brasserie's regional cuisine continues this journey, with an intelligent reflection, where local products tangle with tradition and modernity. Escargots, Morteau sausage and Comté are friends well brought together in a nem with a modern twist, without ever denying the original flavors; Bonnevaux trout proudly represents the rivers of the Doubs, in a plate dressed with sweet potatoes, lemongrass and ginger; the chocolate dessert takes you back to town, with its brownie spirit, between peanut and tonka bean. In the glass, poulsard, trousseau and a few Burgundy wines.
