Chef's Restaurant Wherever, wherever, Jean-François Piège is at home. Place de la Concorde, hidden away in the courtyard of the Hôtel de la Marine, is the new Mimosa, south-facing in the heart of the capital. Thomas Rossi, formerly of the Café Pouchkine, officiates as executive chef, responsible, among other things, for brilliant variations on the mimosa egg, in different forms - tarama, salmon-radish, anchovy paste, lobster cocktail, bottarga or even caviar - demonstrating the virtuosity of a chef who can indulge every whim from an emblematic recipe. The large brigade tries to take care of everything and everyone, from celebrities to the anonymous, who come to taste, for example, the terrine of duck foie gras cooked on the grill and quince (beautiful slice, beautiful texture), the rock octopus grilled in the wood-fired oven, chickpeas crunchy under the tooth, coriander, the meringue in the wood-fired oven, chestnut, clementine, whipped cream, which make a very honorable whole at 2 toques.
