Prestige Restaurant He's here, his house is fine, he's happy to take selfies, and he's happy: Michel Sarran is a successful restaurateur and chef, whose sole aim is to please his guests. A good evening on Avenue Duportal is when the noise level rises gently with each plate, a few bursts of laughter break out and you end up chatting to the next table. It's the talent of the chef and his team, led by Arnaud Ducroux, to create this climate of trust and well-being. The success of this restaurant also lies in the fact that it caters for everyone, with a lunch menu that's unbeatable at this level at €75, or a full-service package at €125. Nevertheless, we have to admit that the four toques really sparkle when the maestro lets loose the horses, after a series of mischievous, regionalist mouthfuls (including the delicate "cassoulight"). Michel Sarran has always made a mockery of codes, so you won't see any grandiloquent number to introduce butter or olive oil, but the bread is good, the cuisine playful and the moment delicious. With truffles in homage to Soulages, parsnips brillat-savarin and poultry aligot, a black plate, then, and very charming, just-roasted lobster, almond milk, shellfish juice with agastache and claws in croque-monsieur, an original, signature and gourmet dish, roasted turbot with saké-glazed mertensia tarbais bone juice and caviar purée, not to mention the famous Mont Royal pigeon, a loyal, melting and juicy devotee, butternut and carcass jus. A fine chocolate-mint dessert with maracuja coulis and ginger-pear soufflé, served in the right place at the right time. The cellar, presented by an enthusiastic young sommelier, Scottie Millot, is a little more compact than in the past, but retains all the fine signatures, without misplaced abundance, at fair and even attractive prices for certain grand flacons (Grange des Pères, Pichon Comtesse, for example).
