Gourmet Restaurant This little address in the Saint-Aubin district was opened in the summer of 2022 by Francesco Formica, born in the Naples region and now a native of Toulouse. Until then, he had pursued a successful career as an engineer, while indulging his passion for amateur cooking. After a stint on the TV show "Objectif Top Chef" in 2020, he decided to take the plunge and change his life by opening this Mantesino, which means "apron", in homage to Italian mamas. With a menu renewed at the beginning of each month (but deliberately limited in scope, since he's alone at the stove), at the unbeatable price of €30, he showcases recipes from his native region, with top-sourced products: Italian charcuterie and cheeses, hazelnuts from Piedmont, tomatoes from the Naples region, burrata from Puglia, "radicchio" (red chicory from Treviso), bergamot from Calabria... A logical first toque for these efforts and this quest for truth, also for the perfect female service (smile, empathy), and for the wine list, tightened and selected, 100% Italian, which could nevertheless be expanded a little.
