Chef's Restaurant Chef Noël Mantel has been forging ahead with the same strength of conviction for many years, consistently developing a personal, regional cuisine. The chef doesn't hesitate to include a few fine products, purely out of greed, and his generosity is undeniable every time. You won't want to miss the lobster ravioli with melting leeks and emulsified shellfish jus, the beautiful scramble of eggs with truffles, local peaches, bouillabaisse jus, artichokes, zucchini, fennel and brocoletti, a roast rack of lamb, thyme jus and seasonal vegetables, a traditional rum baba with whipped cream and vanilla ice cream.
