Gourmet Restaurant Mandibule is first and foremost the story of Maxime Szczepaniak, who, after completing Thierry Marx's "Cuisine Mode d'Emploi" training course in 2020, went on to perfect his skills with Masashi Ijichi (La Cachette, Valence), Frédéric Ménager (Le Ruchotte, Burgundy) and Nadia Sammut (La Fenière). Highly committed to sustainable, local cuisine (all products, with the exception of coffee, are purchased within a 20 km radius), this young chef set up shop at the end of 2023 in the heart of the charming circular medieval village of Alixan. His cuisine is accessible (ajo blanco, leek oil and pierogi, matured pork loin, vegetable tian and strong jus, trout, zucchini and lentils "from here"...), his products are excellent, his service is all smiles and, even if the desserts are a little lacking for the moment, this is still a fine first toque in the form of a "coup de coeur". Nice little local cellar, wisely priced, pleasant, quiet terrace.
