Prestige Restaurant Maison Nouvelle, the exact translation of his name, "Etchebest", is all him. All Philippe, all this generosity, this desire to offer, to make known, to remind us of the virtues of pleasure at the table, of a luxurious "home from home" where luxury is in simplicity and exclusivity. This is how France's most media-savvy chef sees the reception of friends in the Chartrons area. It's his home, a beautiful private residence where you have to show your credentials by ringing the doorbell before you can be pampered by the friendly, natural staff. Everything that happens afterwards belongs to the intimacy of a privileged moment when we commune in the atmosphere created by Dominique and Philippe Etchebest. The chef's cuisine, available in a single menu at €225, and the many attentions paid throughout the meal, have been designed to be accessible and even cordial. We find the beauty of the season, mushrooms in autumn, truffles in winter, asparagus in spring, tomatoes in summer, without ever veering towards the bling bling or the flashy. A true cuisine, a chef's cuisine, that makes sense and gives that intensity and precision to which the MOF collar is no stranger. A cellar master, making his own choices and cherishing the great Bordeaux labels.
