Gourmet Restaurant It's a big challenge for Olivier Barbarin, previously distinguished chef at the sumptuous Hôtel Château d'Audrieu. He's starting virtually from scratch to take on the Caennais in what was one of the revelations of years gone by, the Initial of Yohann Lemonnier, then Vincent Vidal. The chef is attentive to all these parameters and, for his debut, does not hesitate to come into contact with the clientele himself to assist a service that is still timid. The kitchen is being set up, and if we remember a brilliant hand, the deal is obviously not the same when everything has to be reinvented. A 1st toque in this new status and in this pretty setting with beautiful materials (wood, leather) for the poached egg with mushrooms, rack of smoked pork with lardons, olive oil emulsion, pollock powdered with sumac, fresh peas, fresh broccoli with soy sauce, olive oil, burnt eggplant cream, low-temperature veal just roasted, chanterelles and potatoes browned in butter, roast juice, and an all-chocolate that was also the best. Prices seem rather high for the products on offer, but everything will no doubt fall into place as the months go by, especially the cellar, which is very plain for the moment, with a limited choice. We're obviously rooting for them.
