Chef's Restaurant As the years go by, Philippe Gauffre retains the passion and fire that drive him, for a no-nonsense cuisine full of generosity, perhaps a little more conventional today, but still technically excellent. Behind the discreet facade on the Caudéran side, the regulars recognize each other and share a good time over travelled, contemporary dishes (fresh coconut milk with Thai flavours, pink shrimps, caramelized poultry breast, sweet peppers stuffed with semi-salted hake and condiments, shellfish jus, a simple, well-crafted dish) or more flamboyant, such as thinly sliced calf's head, gribiche style, pomme charlotte or crispy Basque hind. Service led by Nicole, the chef's wife, is smooth and friendly, and prices are particularly affordable, with lunch menus at €30 and evening menus at €55 or €65 (5 courses). Well-structured cellar at very attractive prices.
