Chef's Restaurant This year, Stéphane Pitré has reassured us that his Louis is running smoothly: the house is going strong, and we've rediscovered the enthusiasm we lacked last year. The chef's cuisine, which now doubles up in season with that of Calvi's beautiful Signoria, is once again inventive, particularly with seafood, on three, seven or nine-course menus. Original and unexpected compositions based on ingredients from selected producers: daikon cockles and Greek yoghurt, organic egg, beechwood-smoked Colonnata bacon, a pleasant cod-bulot duo wrapped in a chard leaf and carrot-ginger jus, roast duckling, black fig confit and stuffed with foie gras and currants. A lovely and surprising dessert of red bell pepper, raspberries and sainte-maure brings the session to a close with panache. Friendly service and a well-stocked organic and natural wine list.
