His €45 menu is as good as ever, this time featuring potato foam, orange carrot cream, haddock crumble and shortbread cookie; saithe, cereal, Thai broth, crispy vegetables and fried noodles; veal paupiette, vegetable mousseline, pommes grenailles and sesame-peanut sauce; apple-pear crumble, rosemary perfume, chocolate cream and yoghurt ice cream.
