Today, the Loiseau signature is such a guarantee of quality that visitors enter the comfortable, reassuring interior with their eyes closed. The attentive staff contribute to the climate of trust, and here you can indulge in a variety of temptations, both solid and liquid: organic eggs en meurette (world champion in 2025), roast quail jus cremé au marc de Bourgogne, and a dessert cart that's always very tempting. The cellar and "œnothèque", with over thirty wines by the glass or carafe, and some fifty references, enable you to discover many Burgundy estates, such as Chevrot en maranges or Muzard and its santenays.
