Chef's Restaurant Jean-Bruno Gosse has made a name for himself at this Dijon institution, drawing on his experience at Le Pré aux Clercs and his knowledge of the region to offer a generous take on fine dining. The valiant 16th-century house is the stage for a fine regional expression, with bourgeois compositions with a strong identity, such as trout from the Moulin de Pierre flame-cooked with sunflower hummus and saffron-copper velvet, fresh star anise gel, a very fine turbot cooked on the bone with peas and sweet roasted onion, elderberry vinegar and a veil of spring flowers, an elegant pigeon from Patrick Sanchez's Corton, matured in salt and sugar, grapefruit steam and pontarlier with fennels from the potager des ducs in declension, a rhubarb confit, rhubarb frosting and praline pistachios. Remarkable cellar. At the end of September 2024, we learn of the arrival of Chef Gosse's replacement, Iulian Fistos. To be continued...
