Chef's Restaurant The unique menu is entitled "Experiences... "and it's an experience to spend an evening with chef Nathan Cretney, alone in the kitchen and sometimes serving with Madame. The five-course menu takes us to lands where the classicism of the titles has nothing to do with the level of detail and precision of the plates: soft-boiled egg with Aquitaine caviar is served with warm wild garlic bread like a salted kouignamann, pea sorbet flirts with green tomato broth, sea bass with nori seaweed is served with black garlic confit potato and roasted pink radish; the dessert is multiplied by three, with a chocolate cherry marriage on an eggshell plate, and large glasses of cocoa emulsion and steamed brioche for saucing; it's great art and an enormous amount of work around products whose origins are detailed; the hostess matches the plates around wines unearthed with passion, like this remarkable and rare red from Rivesaltes.
