Gault&Millau Academy's member (Editor's note: we learned of Michel Guérard's death on August 19, 2024). This is a frequent opportunity to verify Michel Guérard's reputation among the French who eat. The proof, for example, came from one of our interviewers, who was having lunch the other day with a group of proud Asnières residents: "Michel Guérard started out here in Asnières! It was called the Pot-au-Feu!" That's right! The older generation remember that magical decade (roughly 1965-1975) when Michel became Guérard, attracting the Tout-Paris to this bistro on the edge of Gennevilliers. Half a century has passed. Today, the lucky few take the road to Eugénie-les-Bains to discover this marvellous bastide with its colonial charm, where Michel Guérard, now in his nineties, continues to be an ideal image of savoir-recevoir and passionate gourmet cuisine. Times have changed, as has the layout of the beautifully decorated salons de l'impératrice, and the cuisine is adapting to new fashions, with larger menus and more menus. Chef Hugo Souchet and his brigade guarantee the perfect execution of the great Guerard-inspired dishes: asparagus with girolles and foie gras, crab pannequet with cucumber and green curry, lobster "tourne-feu" with shrimp broth and coconut milk, and sweetbreads sautéed with almond "mahonnaise". The desserts are brilliant, the atmosphere enchanting, and we once again tip our hats to the prowess presided over by the man who was, until his death in August 2024, the doyen of our Gault&Millau academicians.
