Gault&Millau Academy's member Like so many great men before him, Michel Guérard has gone, leaving an immense void. The house he created with Christine nearly half a century ago will continue to prosper, we have no doubt, remaining a paradise for all its lucky visitors. And Hugo Souchet will continue to bring out marvellous dishes, perhaps with a little tightness of heart when it comes to the pillow of mousserons or the drunken lobster of the moon fishermen. But the chef, and his entire brigade, know that Michel's cuisine was above all joyful, mischievous, full of grace and always evolving. So there will be other dishes, other creations, other joys, other children running through the aisles of this unique residence, an epicurean symbol of happiness at the table. Naturally, our academician's five gold toques will remain on the premises this year, thanks to the talents of a team that is even more united and valiant than ever.
