Chef's Restaurant Chickens aren't always on the menu, but this distinguished table has plenty of other resources: notably lovely land-sea dishes such as veal and oyster tartare with lovage condiment, and products worked with a Franco-Catalan influence. Beyond the well-stocked menu, it's on the tempting slate that you can shop for the day's suggestions: a delicate scallop, carbonara and porcini tartlet, a superb "cul noir de Bigorre" pork chop, gratin dauphinois and endive tatin with morbier cheese; the pear clafoutis is for two, but can easily be enjoyed by a good eater. To accompany this cuisine, a well-stocked Franco-Spanish cellar (Château Rayas, Chiquillo Bobal by Erik Rosdahl). Service is friendly and relaxed, with staff happy to discuss dishes and wines with customers.
