Chef's Restaurant Here we find chef Katsunori Nakanishi, trained in Tokyo, and having passed through the kitchens of L'Ourcine in Paris (great era, as Sylvain Danière's second in command) then that of Le Cette, in the 14ᵉ, where he was already wearing two toques. In 2017, he teamed up with an excellent room manager and trained sommelier, Toshiyuki Kondo, to open these "Planeurs" in Toulouse, away from the hypercentre, on the second floor of a decrepit building facing the Canal du Midi. The setting is nicely makeshift, with a terrace under a pergola on sunny days. Comfort is spartan, but you'll feel right at home here, among twenty or so diners, in a very calm, relaxing, jazzy atmosphere, with a young, connoisseur, arty bobo clientele. The products are top-notch, the cooking remarkable, the sauces yum yum, and the work on the many vegetables remarkable. Some dishes, like the foie gras with apricots, even deserve three toques. An extensive wine list with over a hundred references. Despite the imposed hidden menu and the absence of an à côté, the two toques come back naturally.
