Since the departure of associate chef Katsunori Nakanishi in March 2025, after 8 years at the helm, it is now the sole owner Toshiyuki Kondo (in charge of the dining room and wines) who presides over the development of the proposals. Gone is the surprise €57 menu featuring French cuisine by a Japanese chef, now replaced by a €39 menu on a slate, offering a choice of three starters, three main courses and three desserts, in a marked Franco-Japanese vein. A slight downturn in the plate, perhaps, but a chance for a wider public to taste a cuisine that remains original. Another asset is the extensive, cutting-edge and, above all, accessible wine list.
