Chef's Restaurant A Perigordian by adoption since his arrival at Château Les Merles in 2004, Dutch chef Bas Holten has perfectly integrated the region's codes and products. Duo of foie gras (semi-cooked and pan-fried), fig chutney and balsamic vinegar reduction, duck breast tataki, pommes dauphines and roasted figs, chocolate hazelnut entremets, roasted hazelnuts and custard in an attractive gastronomic menu that offers a lot for less than €40. Relaxed, hushed atmosphere, classic cellar.
