Chef's Restaurant For Amélie and Nicolas Coutand, these Genêts are something of a lifelong project. And after ten years in business close to the Atlantic, working directly with the fishermen of Saint-Gilles, only a quarter of an hour away, they can look back with pride on a job well done. And the chef's goal is to focus even more of their efforts on this table, which is one of the best on the coast. With the chef's precision and rigor, for seafood, but also for fine poultry and meats from Vendée farms: for scallops with coffee and grapefruit endives, oysters with leek and yuzu, or braised beef with foie gras on a fine €78 menu, ending with a chocolate-glazed dessert. A varied wine cellar at fair prices, and a close-knit service team led by the hostess.
