Gourmet Restaurant A discreet, elegant restaurant on Place Wilson, well-versed in the codes of traditional dining, and applying them without worrying about contrary fashions. Here, the cuisine is good, the tables are covered and the work is meticulous throughout the extensive, classic menu, mastered in the precision of familiar flavors: carpaccio of scallops marinated in Menton lemon (we could do without the shavings of foie gras and truffle oil), eight-hour lamb mice confit and crushed potato with Nice olives, cassolette of candied apple caramelized in salted butter. Keep an eye on the daily arrivals of whole fish, and opt for the €43 menu, which doesn't offer too much choice, but is effective. Cellar also classic, not too expensive.
