Chef's Restaurant This is a highly recommended hotel in the heart of Lorraine gaumaise, just a few minutes from Montmédy at the foot of the Belgian border. It's a breath of fresh air in a region where food is mostly traditional, with this restaurant instead preferring contemporary and travel inspirations, adding a few exotic touches to its technical cuisine. The menu is always worth rediscovering: marinated shrimps with lemon balm, wasabi cream cheese, crunchy fennel and kalamansi; roasted turbot with salted butter, beurre blanc like a béarnaise, vitelotte, pak choï and glazed radishes; duckling filet with black garlic, celery root mousseline with thyme and conchiglioni stuffed with mushrooms; pineapple, papaya and pomegranate dessert with bourbon vanilla and coconut milk sorbet.
