Chef's Restaurant You can sense the ambitions of the chef, who fears neither complexity nor risk, leaving his imagination at the helm and his destination free. The beautiful house, with its straight, tidy facade, introduces us to a colorful, open world, with impressions of baobab trees and elephants, wood left to its natural state and old stone in its raw state, and a large glass cellar, like a bridge between two continents. This, at least, is the story of Christophe and Eugénie Dupouy, who met at Michel Sarran's, one from the Landes and the other from Benin, and together built their personal vision of cuisine. The result is a sophisticated menu, perhaps deserving a little more simplicity, but nonetheless demonstrating passion and sincerity: leek-topinambur vichyssoise and toasted brioche with chicken jus, shavings of Spanish ham and truffle-candied yolk, chickpea and smoked eel hummus, blanched sucrine and Lebanese tabbouleh, lettuce mayonnaise condiment and trout roe, carrot-ginger gel, ballotine of poularde with royal sauce, parsnip pressé with truffle, watercress and poultry liver condiment, a dame blanche revisited with Sao Tomé and Principe chocolate, a light hazelnut and citrus praline tartlet. Excellent cellar, with over five hundred references.
