The chef works soberly with impeccable, fresh, quality produce, adding a pinch of personality without distorting or over-mixing flavors: sea bream carpaccio with citrus, grilled sesame and condiments, yellow pollack pavé with snapped potatoes, knife au gratin and crab bisque, snacked catfish with crispy potato and morel cream, in a very good €48 menu that ends pleasantly with the dark chocolate dessert with espresso ice cream.
