A beautiful tufa house in old Chinon, with a sculpted pediment and a warm welcome. The Maître Restaurateur, Stéphane Charles, knows his region as well as his regulars, giving everyone a fine image of the terroir through well-thought-out, well-executed creations: escalope of warm foie gras with red wine reduction and blackcurrants, honey-braised sweetbreads with coteaux du layon reduction with lime, mushrooms and artichoke barigoule, tartelette façon tatin with vanilla cream and Cointreau apple coulis for a noble sequence of fine products. Menus are well-structured, with an attractive formula at €39, and the cellar is well-stocked with local and nearby appellations.
