Remarkable Restaurant It's a house firmly rooted in its Aveyron roots, a village inn that pulls out all the stops, keeping alive a generous tradition of excellence. The Fagegaltier family has run the establishment for three generations, keeping alive the inimitable taste and idea of hospitality typical of these grand country houses. Nicole Fagegaltier celebrates the terroir, with leeks and duck ham in a dill and chervil broth with petit épeautre, a cassolette of cockles and Sarradelles snails, chard and fennel, amaranth tuile, veal from Aveyron and Ségala, salsify in meat jus, head in a ravigote emulsion, or the chocolate hazelnut tart, praline ice cream and mandarin notes.
