Chef's Restaurant Continued pleasure for Raymond Cornelissens, still firmly established in the busy Rue Thuret in the city center. You won't want to miss this cosy dining room, where the Belgian chef showcases his technique and approach to traditional French cuisine, corrected in his own way with original dishes: pan-fried Bavarian snails with garlic and parsley sorbet, scallops with capers, grapefruit jelly and spicy carrot purée, lamb shoulder with green bean charlotte, passion fruit soufflé and banana sorbet. The good Vauban menu at €49 is one of the best deals in town, as is the lunch menu at €29.
