Between the discovery menus and the timeless à la carte dishes, such as sweetbread escalope or exceptional beef, mastery is combined with simplicity to offer pretty plates such as langoustines, mackerel fillets and oxalis ice cream, or this paillard of beef fillet and crunchy vegetables.
