Remarkable above all for its setting, the Train Bleu is one of France’s most legendary restaurants, thanks to its sumptuous Art Nouveau decor, designed for the 1900 World’s Fair. With its moldings, gilding, crystal chandeliers, and wall frescoes, the Train Bleu is a museum of decorative arts in its own right—one that you can explore while passing through the station. The menu features recipes by Michel Rostang—classics that, while certainly priced on the high end, deliver a thoroughly satisfying dining experience. Dishes include morel fricassee with vin jaune and sweet onion cream, a whole roasted sea bream Provençal-style, a Niçoise vegetable tian, a roast leg of lamb with gratin dauphinois, and a pistachio and sour cherry soufflé. The service is impeccable.
