Chef's Restaurant Traditional cuisine! Guillaume Mahé clearly shows his colors. A seasoned technician, he ignores fashions that come and go, concentrating instead on the tried-and-tested values that appeal so much to his loyal clientele, who are delighted to settle down in the comfortable, simple yet chic dining room. All you have to do is let yourself be carried away. Our favorite dish is the braised sweetbread, languishing on a bed of spinach and stuffed zitones (a kind of macaroni), topped with a pleasant, lightly creamy sauce. Do the 2 langoustines associated with the dish really stand out? Another question, this time about the starter. Embellished with truffles, the scallops in carpaccio are superb in their freshness and seasoning. But, placed on top, the (free-range) poached egg, runny to perfection, imposes itself and somewhat drowns out the marine subtleties. It's a minor setback, but not a serious one, especially as the dessert is a delicate meringue, kept alive by the restrained acidity of the kiwi and lemon. A cellar of reassuring labels: jurançon by Charles Hours, chablis by Yvon and Laurent Vocoret, saint-joseph and condrieu by Louis Chèze, st aubin by Patrick Miolane...
