Not far from Troyes, Patrice Carillon runs this attractive bistro-style restaurant, authentic with its half-timbered walls and old-fashioned table setting, but modern and bright with its large bay window. Here, the chef strives to recreate the great local classics, in a deserving execution: foie gras mi-cuit de canard marinated in fine champagne cognac, a pleasant return from fishing, a 5A Lemelle andouillette, a filet of beef with chaource coulant.
