Remarkable Restaurant Stéphane Carrade is a great pro, who can be immersed in just about any latitude and environment with equal success. But he's never more at ease than in his beloved South-West, and the large complex at Le Pyla is an obviously exciting playground. Here, he draws his variable and gourmet geometry, respecting the codes of gastronomy for traditists who don't necessarily want to ask too many questions: Gironde caviar and squid follow with ease before a pretty land-sea cry, interlacing sea bream and fennel in absolute freshness, as does the astonishing corps à corps of oyster and rougail with porc noir de Bigorre cabbage and black truffle. A fine piece of work, served by a young, precise team with their expertise slung over their shoulders, who deliver the ocean and the farmer in rhythm, right up to the beautiful vanilla dessert, vacherin fenouil kumquat et kalamansi. A vast regional cellar where the great vintages are well stored.
