Gourmet Restaurant Twenty years ago, Gault&Millau ran a cover story on these "affranchis", chefs trained at the grande école who wanted to express their talent through more accessible cuisine. Philippe Tredgeu was one of them, in his little Entredgeu on rue Laugier. It's a pleasure to find him on the tip of the Port de Saint-Martin, listening to the seagulls, in a completely different environment. Sure, the Seine has flowed and the waves have followed, but the spirit of a warm, human bistro is still very much present, far from Paris, in this renovated traditional decor, with natural parquet flooring, banquettes, white walls, discreet ceiling moldings and a white wooden counter. A real chef's pâté croûte, with quality jelly and fine stuffing, well-cooked scallops, butternut mousseline and jus meunière, vanilla tapioca for dessert, simple, pleasant, not too sweet. The cellar is not a priority, but the choice satisfies occasional drinkers with low prices on glasses.
