Gourmet Restaurant In a tiny street where restaurants are elbow to elbow, Sarah and Julien Richard's Le Seize has all the hallmarks of the ideal table. Sarah's warm, attentive welcome in a pocket-sized, uncluttered dining room and, in the background, in the small kitchen, the chef peering in to take the gourmet pulse of his customers. She worked for Michel Kaiser in Garons, he trained at the Grand-Hôtel du Cap-Ferrat, was chef at La Mère Germaine in Châteauneuf-du-Pape, then at L'Arlatan in Arles. Jovial, this passionate chef with a mischievous eye juggles with talent a menu that highlights local produce. The €39 menu includes an original carpaccio of Alpilles lamb with lemon, mustard seeds and croutons, beautifully presented but a little dry (just a little juice missing), refreshing diced seasonal vegetables on a cream of stracciatella topped with a brousse and arugula ice cream. The sea bream fillets, thinly sliced and cooked in seaweed butter, were perfectly mastered and harmonized with the Camargue rice with fennel and reduced fish soup jus. Perfect in every way, a remarkable pig from La Crau, tender and flavorful, which he accompanies with smoked eggplant, braised romaine leaf and tarragon jus. A fine finish with a thick slice of poached melon with verbena and bitter almond sorbet. The wine list favors organic winemakers: saint-joseph domaine Saint Clair "Les Abîmes de l'Enfer" 2021, minervois domaine Villepeyroux 2014, luberon Château la Verrerie "Hautes Collines" 2018, les-baux-de-provence blanc Mas de la Dame "La Stèle" 2022 (€6.50 a glass). A fine address to take note of.
