It's always a pleasure to return to Valérie and Jean-Marc Réal's table in the Périgord Noir region. With twenty years' experience, the chef has refined his technique to offer an ever more elaborate experience, proposing a playful journey around the country's regions. There's a square of duck foie gras with teriyaki, heart of palm and citrus chutney, crunchy cabbage salad; pan-fried scallops on a raviole with trumpets of death, fennel stew, lobster and chestnut sauce; a quasi of veal with Colonnata bacon, roasted white and green asparagus and fresh morel mushroom stew; a chocolate cube, praline crunch, tangy heart and ivory ice cream.
