Chef's Restaurant The table at this 4* hotel, in the heart of the most famous village on the wine route, keeps its promises, combining the finest vintages with well-crafted market cuisine, combining modernity and terroir. Local produce is combined with more contemporary flavors, with just the right amount of simplicity to keep the fundamentals intact: fried hen eggs from the Pontot farm, mushroom duxelles and chive oil, pike en petit coussin, saffron foam from Les Aulnes à Auxonne, broccoli mousseline, slow-cooked poultry fillet, morel mushrooms stuffed with aiguillettes, yellow wine jus and sautéed green asparagus tips, an astonishing dessert of peas in panna cotta, almond dacquoise, strawberries, mara des bois sorbet and vanilla olive oil. Well-stocked cellar.
