Chef's Restaurant Young 2010 talent Florian Giraud maintains his two-toque status at his welcoming relay a few minutes from Tournus. The place, chic and uncluttered with its flagstone floor and minimal decoration, focuses attention on the plates. We have Burgundy snails, worked into a fritter with a lightly garlicky pea coulis, marinated mackerel, vegetables and sorrel vinaigrette, Quintart pigeon, low-temperature fillet, crispy leg, white asparagus and Voatsiperifery pepper jus, Valrhona ivory white chocolate with tarragon cream, citrus and blackcurrant sorbet. Nice cellar (domaine de Thalie, Paquet, domaine Chevalier, Arlaud, Marc Delienne, Reynaud...).
