Chef's Restaurant This restaurant, once popularized by Gilles and Gisèle Chazot, is enjoying a new lease of life under the management of Frédéric Michel, son-in-law of the previous owners, and his wife Céline. Since 2012, the couple have nurtured the heritage without ever denying it, gradually modernizing this solid country inn. On the plate, Eric Pras's former pupil honors the classics, with duck foie gras confit in its own fat, beet, pistachios and red wine condiment, Bresse poultry with kale, squash, chestnuts and Crémant de Bourgogne sauce, and equally classic desserts like sorbet colonel, or more contemporary ones like carrot and walnut cake, parsnip ice cream and citrus caramel. Smiling service, under the direction of Céline Michel, and a classic cellar that's wisely priced.
