Trained by some of the greatest Parisian chefs, including our academician Bernard Pacaud, his mentor, Jean-Marc Boyer returned to his native south in 2003 to settle in this unique and magical place, a former textile factory overlooking the sometimes violent and destructive Orbiel, in an astonishing setting, almost intimidating at nightfall. Comfortably seated in this often hushed dining room, you can indulge in the carefully-crafted yet rather classic cuisine, available on menus that have unfortunately opted for the "hidden" approach, relying in particular on vegetables from the permaculture garden.
