Remarkable Restaurant In the château's stables, where you'll find this superb room with contemporary elements in a historic setting, the Prince is Vivien Durand, master of fire, clocks and time, which passes so smoothly and pleasantly for regulars and visiting Singaporeans alike. The key word could be harmony, which reigns in the dining room as well as on the plates. With the cod tortilla, coconut, topinambour foie gras grille langoustine broth, the remarkable 10-day matured line loin roasted in a charcoal oven, pil pil basque, panisse, grenobloise sauce, fried chickpeas, fish roe, squash broth, harissa oil or the sweetbreads roasted in beef fat, crispy black garlic condiment, blanquette sauce, fried sweetbreads, macédoine, veal jus... Mastery and imagination through to the equally inventive chocolate caper dessert, attentive, attentive and skilful service, including advice on the extensive wine list covering the entire Atlantic seaboard, as well as alcohol-free pairings in keeping with history.
